- Mild curry powder1 tsp
- Saltto taste
- Black pepperto taste
- White fish fillets600 gperch, snapper)
- Milk¼ cup
- Plain flour⅔ cup

- Burger buns4split and toasted
- Tartare sauce (optional)to taste

Method

Hard-boil three eggs for about 7 minutes, cool in cold water, peel and chop. Mix with mayonnaise, curry powder and seasoning and refrigerate.

Cut fish into finger-sized strips. Whisk remaining eggs with milk. Put seasoned flour in one bowl and panko mixed with garlic powder in another. Coat fish in flour, egg and crumbs, then repeat egg and crumbs for a double coating.

Spray the air-fryer basket. Arrange eight fish fingers, spray and cook at 200°C for 5 minutes. Turn, spray again and cook for 5–6 minutes until crisp and cooked through. Freeze any remaining uncooked coated fish.

Fill toasted rolls with tartare, lettuce, two fish fingers and egg salad. Serve with air-fryer chips.
