- Sweet chilli sauce3 AU tbsp
- Light soy sauce2 AU tbsp
- Oyster sauce2 AU tbsp
- Sesame oil1 tsp
- White pepper1 tsp
- Cornstarch2 tsp
- Chicken thigh fillets400 gfat trimmed and thinly sliced
- Vegetable oil1 AU tbsp
- Garlic cloves2finely chopped
- Carrots1finely shredded
- Bok choy2chopped
- Green cabbage140 gfinely shredded
- Spring onions3cut into 2 cm long pieces, plus extra for garnish
- Chow mein noodles280 grinsed and drained
- Water60 ml
- Bean sprouts140 g
Method

Mix sweet chilli, light soy, oyster sauce and sesame oil, then whisk in white pepper and cornflour. Toss 2 tablespoons of this mixture with the sliced chicken.

Heat vegetable oil in a wok over high heat. Stir garlic for 10 seconds, add the chicken and stir-fry for 2–3 minutes until seared.

Add carrot, pak choy, cabbage and spring onions and cook until just wilted. Toss in noodles, remaining sauce and water for 1 minute. Add bean sprouts and stir until combined and the chicken is cooked through. Serve immediately with extra spring onion.
