Place a 25 cm ovenproof frying pan on the middle oven rack and heat to 240°C, or 220°C fan forced. Whisk flour, salt, milk and eggs until smooth; rest the batter for 10 minutes.

Carefully remove the hot pan, melt the 30 g butter in it and swirl to coat. Pour in batter and bake for 15–18 minutes until puffed and golden.

Meanwhile, heat oil and the remaining 40 g butter in another pan. Cook mushrooms for 5–6 minutes, then add garlic and seasoning for a few minutes. Immediately top the cooked pancake with mushrooms, chives, goat's curd and optional thyme. Slice and serve.
