  • Peanut oil2 AU tbsp
  • Garlic cloves3
    finely chopped
  • Peeled prawns400 g
    tail on
  • Eggs2
    lightly beaten
  • Spring onions3
    trimmed and sliced
  • Cooked jasmine rice5 cup
  • Frozen peas1½ cup
  • Soy sauce¼ cup
  • Sweet chilli sauce¼ cup
  • Coriander bunch½ cup
    chopped + extra leaves to serve

Method

    Toss prawns with 1 tablespoon peanut oil and garlic, cover and refrigerate for 15 minutes.

    Heat the remaining oil in a wok. Swirl in beaten eggs for 1–2 minutes until set, fold into an omelette and remove. Roll and slice it.

    Stir-fry prawns for 2–3 minutes until pink. Add spring onions, cold cooked rice and peas and stir-fry until hot. Fold in omelette, soy sauce, sweet chilli sauce and coriander. Heat until prawns are cooked through and serve with extra coriander.
