  • Ricotta500 g
  • Milk⅔ cup
  • Dijon mustard1½ AU tbsp
  • Lemon zest2 tsp
  • Melting cheese blend210 g
  • Tinned tuna425 g
    drained, flaked into large pieces
  • Spring onions3
    thinly sliced, extra to sprinkle
  • Dry brown rice1 cup
  • Frozen peas1 cup
  • Eggs1
  • Breadcrumbs80 g
  • Tomatoes1
    sliced
  • Lemon (optional)to taste

  • Black pepperto taste

Method

    Cook brown rice following its packet and drain. Heat the oven to 220°C, or 200°C fan forced.

    Whisk ricotta, milk, Dijon mustard, lemon zest and 1 cup of the melting-cheese blend; season. Mix 1 cup of this sauce with tuna and spring onions.

    Spread cooked rice in a 2-litre baking dish and add peas. Layer on the tuna mixture. Stir egg into the remaining ricotta sauce and spread over the top, then add breadcrumbs, tomato slices and remaining cheese.

    Bake for 20–25 minutes until golden and hot throughout. Finish with extra spring onion and lemon wedges.
