Ingredients
Scaled for your household (4 portions) · original serves 4
- Whole chicken1 lb
- Paprika2 tsp
- Salt2 tsp
- Garlic cloves1 tsp
- Brown onion1 tsp
- Basil1 tsp
- Dried Thyme½ tsp
- Black Pepper½ tsp
- Olive oil1 tbsp
Method
- 1
At this stage, preheat your smoker or pellet grill to 225℉ (107℃). Trim 1 (3 to 4 pound) whole chicken of any excess fat or skin that's hanging loose.
- 2
In a small bowl, mix together 2 teaspoons paprika, 2 teaspoons salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried basil, 1/2 teaspoon dried thyme,; then 1/2 teaspoon black pepper.
- 3
Spoon over 1 tablespoon olive oil over the chicken, ensuring an even coating. Rub the chicken with the prepared spice mixture. Be sure to distribute some of the seasoning under the skin for enhanced flavor.
- 4
Place the chicken directly on the grill grate, breast side up. Close the lid; then smoke the chicken until it reaches an internal temperature of 155℉ (68℃).
- 5
To finish cooking; then to achieve a crispy skin, increase the smoker temperature to between 375-400℉ (190-204℃). Continue to roast until the thickest part of the chicken breast reaches 165℉ (74℃). The actual cooking time may vary depending on the size of the chicken.
- 6
Remove the chicken from the smoker; then let it rest for about 15 minutes before carving. Enjoy your smoked juicy chicken!
