  • Milk60 ml
  • Taco seasoning1 AU tbsp
  • Garlic cloves2
    crushed
  • Sweet potato500 g
  • Grated cheddar200 g
  • Spring onions2
    finely sliced
  • Coriander bunch¼ cup
    plus extra for garnish
  • Saltto taste
  • Black pepperto taste
  • Olive oil1 AU tbsp
  • Guacamole (optional)to taste
  • Hot sauce (optional)to taste

Method

    Preheat to 180°C, or 160°C fan forced. Whisk four eggs with milk, taco seasoning and garlic. Mix in grated sweet potato, 1½ cups cheese, spring onions and coriander; season.

    Heat olive oil in an ovenproof frying pan with a roughly 20 cm base. Add the mixture, flatten and cook for about 5 minutes until its base is golden.

    Make four hollows, sprinkle on remaining cheese and crack an egg into each. Bake for about 15 minutes until firm and the egg whites set. Finish with coriander and serve with guacamole and hot sauce.
