At this stage, zest the lemon and set the zest aside. Reserve the lemon for another use.

In a Dutch oven or deep skillet, heat the olive oil on medium heat.

Stir in the garlic, basil, salt,; then chili flakes. Cook 1 minute or until fragrant.

Stir in the tomatoes; then lemon zest, mix to mix together. stir in pasta and boiling water, mix with tongs to ensure the pasta is covered.

Put the lid on; then cook for about 4 minutes, giving it an occasional mix. Uncover and cook until the pasta is tender, about 6 to 8 minutes more.

Mix in the spinach leaves until wilted. take off the heat, stir in the Parmesan cheese; then mix to mix together. put the lid on and let rest 5 minutes.

Season with additional salt; then pepper to taste. Garnish with fresh basil and additional Parmesan cheese if desired.
