In a medium pot on medium heat, stir in olive oil. stir in shallot; then cook for about 1 minutes. stir in garlic and cook until fragrant.

Stir in vodka and let it reduce by half (about 1 minute).

Stir in passata, cream, chilli flakes, salt, pepper,; then broth. mix and bring up to the boil.

Lower the heat to a simmer; then stir in pasta directly into the pot. mix and put the lid on with a lid.

Remove lid; then cook for another 10 minutes until pasta is al dente and sauce thickens.

Stir in pecorino; then basil. Adjust salt and pepper. mix until the sauce reaches a good consistency.

Serve on a plate. stir in burrata in the center, cut it open (cross cut),; then spoon over with olive oil. Finish with basil leaves and chilli flakes.
