  • White fish fillets300 g
    skin off
  • Dijon mustard2 tbsp
  • Salt¼ tsp
    to season
  • Black pepper¼ tsp
    to season
  • Breadcrumbs½ cup
    panko preferred
  • Flat-leaf parsley1 tbsp
    finely chopped
  • Parmesan30 g
    finely grated
  • Garlic cloves1
    minced
  • Olive oil1 tbsp

Method

    Preheat the grill or broiler to high. Combine the breadcrumbs, parsley, parmesan, garlic, olive oil and a pinch of salt in a bowl.

    Season both sides of the fish with salt and black pepper. Spread the Dijon mustard over the top of each fillet.

    Press the breadcrumb mixture firmly onto the mustard-coated side of each fillet.

    Lightly oil an ovenproof frying pan and heat it over high heat. Add the fish crumb-side up and cook for about 1 1/2 minutes.

    Transfer the pan under the hot grill for about 5 minutes, until the crumb is golden and the fish is just cooked through. Serve immediately.
