- Vegetable oil3 tbsp
- Ginger4 tspfinely minced
- Garlic cloves5minced
- Brown onion1large; finely diced
- Beef mince500 g
- Salt⅔ tsp
- Ground cayenne pepper (optional)1 tspomit for non-spicy
- Garam masala1¼ tsp
- Ground cumin1¼ tsp
- Ground coriander1¼ tsp
- Ground turmeric½ tsp
- Water1 cuptap water
- Coriander bunch (optional)1 bunchfor garnish
- Plain yogurt (optional)⅔ cupoptional serving accompaniment
- Mint leaves (optional)½ cupoptional mint yogurt
Method

Heat the vegetable oil in a large frying pan over high heat. Add the ginger and garlic and cook for about 30 seconds, just until golden and aromatic.

Add the diced onion and cook for about 1 minute, until it begins turning translucent.

Add the beef mince and cook while breaking it into small pieces until the meat changes from pink to light brown.

Add the salt, cayenne if using, garam masala, cumin, ground coriander and turmeric. Stir thoroughly so the spices coat the beef.

Pour in the water, stir and bring to a simmer. Cook until the liquid reduces and the beef is coated in the spiced sauce, stirring as needed.

Taste and adjust seasoning, then serve hot. Finish with coriander if using; plain yogurt or the optional mint yogurt can be served alongside.
