Method

Lightly flatten pork with a meat mallet. Dust in flour and shake off excess. Dip in eggs beaten with the measured water, then coat firmly in panko.

Stand cutlets for 10 minutes. Meanwhile, soak shredded cabbage in ice-cold water for 5 minutes; drain and dry.

Heat frying oil and fry cutlets for 5–6 minutes, turning until both sides are golden and pork is cooked. Drain and cut into wide strips.

Serve with cabbage, tonkatsu sauce and karashi.
