- Vegetable oil1½ tbsp
- Brown onion½finely diced
- Ginger2 tsp
- Garlic cloves2minced
- Red chilli (optional)1deseeded and finely chopped; optional
- Pork mince500 g
- Brown sugar5 tbsp
- Fish sauce2 tbsp
- Spring onions (optional)1for serving
- Jasmine rice (optional)2 cupoptional serving base
- Lebanese cucumber (optional)1optional
- Tomatoes (optional)1optional
Method

Heat the cooking oil in a large frying pan over high heat.

Add the onion, ginger, garlic and chilli if using. Stir-fry for about 2 minutes until fragrant.

Add the pork mince and cook for about 2 minutes, breaking it apart with a wooden spoon until the meat is no longer pink.

Add the brown sugar and fish sauce. Stir, then leave the pork undisturbed for about 2 minutes so the liquid cooks away and caramelisation begins.

Stir the pork, then leave it untouched for about 30 seconds at a time, repeating until the mince is caramelised to your liking.

Serve over rice if using and finish with sliced spring onion. Add cucumber and tomato on the side if desired.
